Freezer Meals

So I didn't like having the freezer meal post taken over my blog.. so now I'm just cutting and pasting them into a page.. Thought it'd be easier for everyone else to read anyway..

Glazed Pork Chops:1 bag of baby carrots
4 boneless pork loin chops
1 jar (8oz) of apricot preserves (I actually used pineapple preserves b/c Tim doesn't like apricots)

Place carrots at the bottom of a slow cooker, place pork on carrots and brush on preserves.
Cover and cook on low for 8 hours.

Ham and Beans
Over thanksgiving we made a ham, so I froze the ham bone and saved it for this....
Soaked Pinto beans overnight
In my slow cooker I put the ham bone, a small ham (about 8 oz) and cut into cubes, pinto beans and covered with water.  Then you just let it cook for about 6-8 hours on low.  If the soup doesn't get soupy enough, you can smash up some of the beans and put back into the slow cooker.

Beef Stew
1 lb beef for stewing
2 TB of flour
2 TB of olive oil
3 Onions, chopped
12 small red potatoes cut into quarters
2 carrots
4 cloves of garlic
1 teaspoon of Thyme
32 oz of beef broth
2 TB of Tomato paste
1 1/2 teaspoon of coffee grounds

Sprinkle beef w/ pepper, and coat with flour.  Heat oil in skillet over med-high heat.  Add beef and cook until browned, stiring often.
Place onions, potatoes, garlic, and thyme in slow cooker.  Mix 1 cup broth, tomato paste and coffee.  Pour coffee mix into slow cooker.  Then add remaining broth into the cooker.
Cover and cook on low for 8-10 hours.

I also have some Lasaga my mom made for us.. This isn't her recipe, but here is a good one:
Lasanga
1 1/2 pounds lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
2 tablespoons brown sugar
1 1/2 teaspoons salt
1 (29 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
12 dry lasagna noodles
2 eggs, beaten
1 pint part-skim ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
1 pound mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese


In a skillet over medium heat, brown ground beef, onion and garlic; drain fat. Mix in basil, oregano, brown sugar, 1 1/2 teaspoons salt, diced tomatoes and tomato paste. Simmer for 30 to 45 minutes, stirring occasionally.
Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry.
In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley and 1 teaspoon salt.
Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce. Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese over the top.
Bake in the preheated oven 30 minutes. Let stand 10 minutes before serving



I think that is all my recipes!!  I know that isn't 30, but I made double on alot of the recipes, so we have a few of each.  If you have any other suggestions please let me hear them!  (leave a comment or whatever!!)  Enjoy!!

Today I've been cleaning and starting to decorate the baby's room!  Thought I'd take a couple mins and post a few more recipes...
Egg and cheese sandwichesI used sandwich thins, but you can use english muffins or biscuits...
I put the thins bottom on a cookie sheet, buttered them

Then I scrambled up the eggs, and cut them into 6 pieces
-Put the eggs on the buttered side of the bread
-Put cheese on top of egg, ( I used shredded cheddar, but slices would be good too)
-Put the sandwich top on the cheese
-I wrapped with plastic wrap, and put in the freezer to freeze
-Once frozen, wrap in plastic wrap or ziploc
-When you heat up, just wrap in paper towel and microwave for a minute or so!


Maple Soy Pork Chops with Onion and Mushrooms
I took some maple syrup and soy sauce in a ziploc. I had 4 center cut chops. I mixed it up, and put it in the fridge for an hour.

-I just pan cooked the chops with olive oil, put them on a plate to cool
-I chopped up the onions, and sauted them with the pan drippings
-the same with the mushrooms

I put everything out to cool, then out the chops in the big bag, and the onions and mushrooms in a small bag inside the big bag. Then I froze it!

Mom's BBQ
This is really easy and pretty much just done to taste.  All you do it brown up some ground beef then add kethcup, brown sugar, and mustard to taste.  You add more kethcup than mustard.  Serve on a sandwitch.

Creamy Potatoe Soup (pamper chef recipe)
Loaded Baked Potato Chowder

Ingredients:
 3 baking potatoes (about 2 1/2 lb/1.1 kg)
 3 1/2 cups (875 mL) milk, divided
 4 oz (125 g) cream cheese, softened
 2 tbsp (30 mL) butter
 2-3 green onions with tops (1/4 cup/50 mL sliced)
 4 oz (125 g) sharp cheddar cheese, grated
 1 1/2 tsp (7 mL) salt
1/2 tsp (2 mL) coarsely ground black pepper
 Optional toppings such as chopped cooked bacon, sour cream or steamed broccoli florets
Directions:
1. Slice potatoes in half lengthwise with Santoku Knife; place in Deep Covered Baker. Pour 1/2 cup (125 mL) of the milk over potatoes. Microwave, covered, on HIGH 11 minutes. Remove baker from microwave. Move center potatoes to ends of baker and outer potatoes to center. Cover; microwave on HIGH 8-11 minutes or until potatoes are easily pierced with a fork. Remove baker from microwave. Coarsely mash potatoes with Mix 'N Chop.
 2. Meanwhile, whisk cream cheese until smooth in Classic Batter Bowl. Slowly add remaining 3 cups (750 mL) milk, whisking until smooth. Add cream cheese mixture and butter to baker. Microwave, covered, on HIGH 3-5 minutes or until mixture is hot. Slice green onions with Chef's Knife.
 3. Carefully remove baker from microwave. Grate cheddar cheese over chowder using Rotary Grater; add green onions, salt and black pepper and mix using Small Mix 'N Scraper® until cheese is melted. Serve with toppings, if desired.

Ok, I have the baker they used, so I could do this in my microwave, but I'm sure you could do the same on the stove.

Mini Meatloaves                                                 For sauce:
2 eggs beaten                                                      1 cup ketchup
3/4 cup crushed ritz crackers                               1/2 cup brown sugar
1/2 cup parmesam cheese
1/2 cup milk
1 chopped onion
1 teaspoon worcestershire sauce
1 teaspoon italian seasoning
1 teaspoon garlic salt
1lb ground beef
1lb ground sausage

Preheat oven to 350 F.  Combine eggs, crackers, milk, cheese, onion, worcstershire sauce, seasonings, and meat.  Mix together.  Seperate into the the mini loaves (or not if you are using a big pan).
In a separate bowl mix ketchup, brown sugar and 1 tablespoon of worcestershire sauce.  Mix and put some on each loaf. 
Bake for 45-60 mins

Fajitas:Fajita Marinade (1/4 cup veg oil, 1/4 cup balsmic vinegar, 1 teaspoon sugar, 1 teaspoon oregano, 1 teaspoon chili pepper, 1/2 garlic pepper, 1/2 teas. salt all mixed together)
1 1/2 lbs beef boneless top steak
2 T veg oil
2 large onions
2 med green pepper ( I did one red and one green)

Make Marinade in small bowl.  Pierce beef with fork.  Put beef and marinade in a baggie and refrigerate for at least 8 hours(but not longer than 24 hours)
Remove beef from marinade (set marinade aside).  Place beef in broiler pan and broil beef for about 8 mins or until brown.  Turn and brush beef with marinade.  Broil for another 7 to 8 mins (for med to med rare).
While beef is broiling, heat oil in a 10 in skillet over med-high heat.  Cook onions and bell peppers until tender.
Cut beef into thin slices.  Mix with onion and pepper mix.

*let that cool and place into a bag.  Then I got flour torillas, and a bag of cheese and got a 2 gal bag.  I put the fajita meat bag, the torillas and the cheese all into the bigger bag (that way everything is ready when we defrost).  Label and date.

Chicken noodle soup
I didn't really have a recipe for.  I just got some chicken broth, seasoning, chicken in a can, and egg noodles.   I added mixed veggies (frozen) to it and just let it all cook.  I did put a tiny bit of baslmic vinegar in it.  Its just a taste and go kinda recipe.  Then I put into freezer bags.

Chicken pot pie.3 Can chicken
1 green beans
2 cans mixed veggies
2 cans cream of chicken
2 cans cream of mushroom
1/4 cup dried onions (used on green bean cassarole)
4 premade pie crust
4 disposal bread pans

Preheat over to about 350.  Put one pie crust into each pan.  Mix everything else together.  Put mix into the pie crust.  Cook for about 30-45 mins (until crust it golden brown)
Then let cool.  Put foil over pans.  I put two in a bag and labeled and dated

So I had a few people want the recipes for my freezer meals.  I think it will prolly just be easiest if I just post them on here.  I'm up to 30, which was my goal!!  Now I'm to the point, if I feel like cooking more I will, if not, not biggie!  So I will post a few recipes per post every couple days-I think that is the best way.. Enjoy!!

Cream Cheese Chicken: 
  • 3 lbs chicken (cut into pieces)

  • 1 (2/3 ounce) package Italian salad dressing mix

  • 4 tablespoons melted butter (divided)

  • 1 small onion, chopped

  • 1 garlic clove, chopped

  • 1 (10 1/2 ounce) can cream of chicken soup

  • 8 ounces crem cheese

  • 1/2 cup chicken broth

    Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
    Cook on low for 4-6 hours.
    Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
    Add this mixture to crock pot and cook on low for an additional hour.
    Serve over noodles or mash potatoes
    *I let this cool down and then put the chicken in to freezer bags.  Make sure when you put them into the freezer to lay it flat, so it will can be stacked.  Then I just put a note on my log to be served over noodles or mashed pot. Labeled and dated it.

    Crab and corn chowder soup(this comes from Rachel Ray comfort foods cook book.. and I love it!)
    2 T butter
    2 slices of bacon, cooked and chopped
    1 med. onion
    1/2 red bell pepper
    4 sprigs of thyme
    salt and pepper to taste
    2 teaspoons of hot sauce (Tabasco)
    2 T flour
    2 teaspoons of old bay seasoning (or whatever seasoning you like)
    3 cups of half and half
    2 cups of chicken broth
    1 cup frozen shredded hashbrowns
    6 ounces lump crabmean, broken up
    1 cup frozen corn

    In a med. pot over med-high heat, melt butter.  Add bacon, onion, bell pepper, and thyme.  Season with salt, pepper and hot sause.  Cook for 5 mins.  Stir in flour and Old bay and cook a min. more.
    Whish in 1/2 and 1/2 then add broth.  Bring soup to a bubble, then stir in the potatoes.  Simmer untill potatoes are cooked and soup has thickened enough to coat the back of a spoon (normally takes about 15 mins) Add crab meat and corn.  Take thyme stems our of the soup.
    Let cool and put into freezer bags.  Date and label.  


    Roast Beef with VeggiesThis I didn't have a recipe for.  Get a roast, put it in the crock pot.  Then about 3 cups of beef broths, 1 cup of cooking wine.  Some spices for flavor, then add the veggies, carrots and potatoes are good.. Let cook on low for 5-6 hours. 

    *Again I let it cool down and then cut the roast into pieces (it acutally fell into pieces.. which is what you want) and put it into a freezer bag.  Labeled and dated it.


    Bowtie Lasanga (recipe is for one serving.. but I made 3) 1lb ground beef
    5 cups of bow tie noodles
    3 cups spaghetti sauce
    1 T olive oil
    1 teaspoon of salt
    1/2 teaspoon of garlic powder
    1 teaspoon of italian seasoning
    1/2 cups of mozzarella cheese
    1/2 cup sour cream

    Cook up the beef, meanwhile cook noodles.  After noodles are cooked drain and drizzle with olive oil.  Mix in Spagehitti sauce, meat, seasonings, cheese and sourcream.  Cook over low heat for about 5 mins.

    *Let cool and put into freezer bags.  Label and date. ( I had 2 bags of this, b/c we ate one of the 3 for dinner.. it was good)
    Now, its time for me to get ready for date night with the hubby!! :-)


  • Baked Ziti (one serving)
    1 lb dry ziti pasta
    1 lbs of ground beef
  • 1 onion
    1 1/2 cup sour cream
    3 jars of tomato sauce
    6 ounces of Provolon cheese
    8 ounces of Mozz. cheese


    Cook pasta, while cooking pasta-cook meat w/ onion.  Add pasta sauce to meat and simmer for about 10 mins.
    Preheat oven to 350.  Butter a 9x13 pan.  Layer as following: 1/2 pasta, Prov cheese, sour cream, 1/2 sauce meat mix, other 1/2 of pasta, mozz cheese, remaining sauce.  Bake for about 30 mins.  Its really yummy!



    The Southwest Veggie Soup is super easy! 
    All you need is a frozen bag of corn, a can of mix veggies, 2 cans of chili and 1 cup of hot water.  You mix all the ingredients on med/low heat and done.  I had some of lunch.. it was really good for as easy as it was!
